The video won't play saying I must first accept the cookie policy. How and where do I do that?

Is this a video in a Canvas course, or somewhere here on the Instructure Community site?
If the video is in a Canvas course, you'll likely need to contact your school/institution Canvas support team (usually in the eLearning / IT / Digital Education areas). There are a lot of different ways video can be inserted into courses via many 3rd party vendors, so that team will be able to give you the best guidance, whereas community users here would just be making guesses.
If the video is on the community site here, if you could reply back with a link to it, the community team will probably be able to take a look and see if they can find out what's going on or give you some guidance.
