I am trying to answer an audit which requires dated training logs. Is there a way in gradebook to pull WHEN an assignment was completed?

Hi there @gtg345x! When you say the "assignment is completed" do you mean when the student completed it? If so, you can go into SpeedGrader for the assignment. For each student, it will show the date and time they "completed" the assignment by uploading a file, submitting a quiz, etc. The location of that submission time is highlighted in the image below:
