I am trying to answer an audit which requires dated training logs. Is there a way in gradebook to pull WHEN an assignment was completed?

You can access the "Gradebook" history page to view when an assignment was graded. Please follow the instructions here: 📔 How do I view the history of all grading changes in the Gradebook?
Hi there @gtg345x! When you say the "assignment is completed" do you mean when the student completed it? If so, you can go into SpeedGrader for the assignment. For each student, it will show the date and time they "completed" the assignment by uploading a file, submitting a quiz, etc. The location of that submission time is highlighted in the image below:
