I can't find how teachers can view an assignment analytics, such as the average. Everything I search tells me how to hide or show the grade distribution graphs from student view. As the teacher, I would like to see this data.

As an instructor, you should be able to see this kind of information via New Analytics. Check out this Guide:

If you look at the image under the heading "Filter by Assignment", you'll see that chart has a bunch of blue dots. In your own course, you should hopefully have something similar. Click on a blue dot for an assignment within the chart, and a fly-out menu on the right side of your screen will appear. You'll see a smaller chart showing "Average Grade", "Low", and "High".
