How can I execute a take home exam (via Canvas) that is limited to 3 hours once the student checks out exam during a two day window AND allows students to submit their answers as a document (scan, word, excel) so I can see their work?
Welcome @jmalden to the Instructure Community! What I would do in your situation is use the file upload question type with the following settings:
I would also not enable the option to let students see their quiz responses. This will allow you to give feedback on their submissions, including question comments, without student seeing those. They will see the score as well as assignment comments.
