One of my completed courses is still on my course dashboard. I have checked my "all courses" settings and have found that none of them are "star-marked". Any possible remedies?

You will need to select (star) at least one course that you DO want to show up on your dashboard. If you have nothing starred, Canvas will display courses based on whatever default is set in the system.
