Does anyone know why TurnItIn is no longer showing under External Tools when creating or editing assignments? It was there in December, but is no longer showing up.

Turnitin is a system what a school/institution would pay for separately from Canvas. My guess is that your school/institution administration decided not to renew their Turnitin license. You could reach out to your school/institution Canvas team (usually in the eLearning / IT / Digital Education areas) to confirm my suspicion. If I'm wrong, that team should be able to investigate and fix whatever the issue might actually be.

Hi @CatherineLittle check if you see it when you click on the three dots next to + Assignment on the Assignments page. If that is the case, it means your Turnitin connection was upgraded to LTI 1.3. This upgrade removes Turnitin from external tools to the menu button on the Assignments page.
