Typically the only option I give students is the text box entry option yet students are still somehow uploading documents.
How to I prevent this?
The Text box uses the Rich Content Editor (RCE) which includes the ability to "insert links, images, media, and documents." I don't think there is any way to block students from using the tools in the RCE. Perhaps it's a matter of writing very explicit instructions for the assignment that you will only accept typing that is done in the text box (and that they are welcome to copy and paste from their document, but that you don't want an upload or link).
It's unfortunate that I can't turn off that option. Downloading assignments across 100 students means my computer is overloaded and/or I have to waste time deleting them all after they are graded.
Unfortunately my writing in large fonts with bold and underlining stating I only want links means nothing to about a handful of students per class.

This is really a fatal flaw if you are trying to use Proctorio (for in-class or at-home essays). Even with Proctorio enabled, a Canvas Quiz essay question allows document and image uploads into the Rich Text Editor. How do I block this, so a student can't upload a document or screenshot, use it as cheat notes while writing, and then delete it before submitting the response? Saying I can review the video log of every single student to look for this is just not an acceptable answer. Canvas needs to give instructors control over the upload function in the RTE "essay" response format in Quizzes.
You can prevent the upload of files via the RCE in Quizzes (Quiz Settings) but that same feature isn't available for assignment - be great to get some consistency of features across Quizzes and Assessments
