Hi, I've set up a free Canvas account but the 'New Quiz' function is greyed out. Does anybody know what kind of account I would need to have access to this function?

Unfortunately, it doesn't appear that New Quizzes is available in FFT (Free For Teacher) accounts. I found this Guide which addresses availability in the first question under "General":
