Hello, I will be out of the country for the first two weeks of the second semester. I was wondering if I need to create new courses in Canvas to submit assignments via Canvas during those two weeks that I will be out.

It sounds like you are a student...based on where you say you want to "submit assignments". If you are a student, you should really check with your instructor about your coursework...especially since you will be out of the country. You've posted your question in the global Canvas Community website, and we do not have access to any of your Canvas courses or your school's Canvas environment. As a student, you generally wouldn't be able to create new courses...as that is all handled typically by your school's IT and Online Learning / eLearning / Distance Education team. Assignments live within any courses that you are enrolled in. I'd encourage you to reach out directly to your instructor...which you can do via Canvas:
