I assume you are looking for the student's submission through the SpeedGrader? If so, have you looked to see if the student submitted something multiple times to the same assignment? Check out this Guide: How do I view the details of a submission for a st... - Instructure Community (canvaslms.com). Specifically, look at the section on "Evaluate Multiple Submissions" to see if, for that particular assignment and student, there are multiple submissions.

Something that my students used to do a lot was upload the file to the comments section of the assignment, instead of uploading a file for submission. I would consider checking the comments section. The new assignments enhancements feature for students does help make this much harder for students to do.
