You should be able to follow the How do I edit my profile in my user account as a s... - Instructure Community guide to edit your profile info (including bio). There is a note on that guide stating if you can't edit your information that your school/institution hay have disabled that. If that's the case, you'd probably want to reach out to your school/institution Canvas team (usually in the eLearning / IT / Digital Education areas) to see if they'd be able to modify it for you or what they would suggest.
