Why can students not submit a Google document from Google drive anymore? Can this be fixed?

Google is an external integration with Canvas, and there are multiple different versions of Google integrations that have been available over the years. I would honestly talk to your school's Canvas team (usually in the eLearning / IT / Digital Education areas) about this. I can tell you the option to submit from Google Drive is still available for my institution, so it sounds like perhaps someone intentionally removed it from your specific Canvas instance for some reason.
