I am entering material for my class that starts next week and only have access to module 1. In past years, I could access all the modules for the entire semester course. Is there a setting I need to change?
Most instructors open up new modules on a schedule. For example, your instructor might open up a module.eqch week. That is how we instructors typically design our courses.

When you say you only have access to module 1, do you mean that you cannot see any of the other modules in your course? Did you import/copy content from a previous course into the current course? If so, did you do a full course import, or did you only import specific content?
