When I logged in for the first time, I noticed that there some extensions enabling us to use docs and excel. I even created a document. However, I can no longer find them. Where are they supposed to be?

This doesn't sound familiar to me at all. Might you have some extra extensions and/or plug-ins installed within your web browser? Or, might your instructor have set up some content in your course that was using these extensions? I'd recommend contacting your instructor directly to see if he/she knows more about this.
