I accidentally deleted a graded assignment. How can I recover the assignment and grades?I already attempted the /undelete trick and it did not show me the assignment.
The next best option, @sarmassa is to check the beta instance of Canvas on your server. That is refreshed weekly, so you can go there and see what your production instance looked like as of June 10. The other option is the test instance, which is updated monthly and last on May 20. Note that both instances are set to be refreshed on June 17.

You won't be able to export comments from those instances, so you might have to copy and paste. You can export the gradebook.
If these instances do not work, the best option is to contact your local Canvas support team or Instructure rep.
