Student is making a response in a discussion and can show screenshots of what she submitted. Intermittently, her responses appear blank to me. If I go to “edit” her blank response, I see what she has submitted.

In addition to the info that @JessicaDeanSVC provided, I might also suggest you clearing your browser history/cache. After that, close your browser. Then, re-start the browser and log back in to Canvas. See if anything has changed for the better. If not, then you might want to reach out to Canvas Support.

The first thing that comes to mind for me is wondering what browser you are using. Often, content won't appear correctly in Canvas if you are using an older browser (or even a current one if it's Safari...). You can visit Canvas' browser requirements page to see if your browser is up to date or has some other settings that commonly cause issues in Canvas.
While typing an Announcement, sometimes midway, we need to check something for which we click on Grades or Assignments. Then when we return to Announcements, what we types simply disappears. It will be very helpful to have a DRAFT option under Announcements so that the unfinished message is not lost.
I have used Blackboard, Moodle, and now work at a Canvas university. When grading quiz items. I want the ability to view all of the students' responses to a single item at once. My class policy is that late assignments can be accepted at professor discretion, but they will have a 50% penalty. This is a gate you pass through once, and there are no further penalties. If it's late, you simply get 50% deducted from whatever the score was. This happens regardless of whether it's 5 hours late or 5 weeks…
