Also, I'm not sure what mobile device you may have, but on my iPhone, I can go to my "Settings" app, then tap on "General", and then tap on "Date & Time". I have the toggle switch for "Set Automatically" turned on (so that it's green). I wasn't able to find any setting within the Canvas Student app where I could configure any time zone settings.
