I’m currently facilitating a course on Canvas in the US, and have to travel to NZ for a month. Will I be able to access my course by using a VPN?

I would say that in general, Canvas should work in New Zealand right now. Instructure generally follows United States regulations, see Which countries are restricted from using Canvas? - Instructure Community . I wouldn't think a VPN would be required either, unless your school's login system has that requirement. With both of these things being said, it's hard to guarantee access since a number of different factors could come in to play. if you know anyone in the location you're traveling to, you could perhaps have them try to access your Canvas site to see if they can at least get a login screen.
