Hi @DrAlisonCoull - if you are using Classic Quizzes, you can create a question group on the Questions tab. Drag existing questions into the group or add questions from a question bank. If you are using New Quizzes, you can enable a setting to shuffle questions on the Settings tab.

You'll need to first put the questions in a question bank, then create the quiz to pull questions from those question banks.
You'll want to review the guides on this page for either quizzes or new quizzes, depending on what tool you have access to.
