Is there anyway to allow students to see a course but temporarily "hide" it from the parents/observers while we test some features? Or is the only work around to remove all the parents and then add them back?

Have you considered using the Test or Beta sites? Either of these might work, though I think student access is limited.

If those don't work for you, you might consider changing the observer role permissions to see if there was a way to limit access. That might be easier than un-enrolling and re-enrolling all parents.
When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
