I would like to know if the assignments I have assigned can be accessed by a teacher teammate now so I can ensure the students are able to access and interact with any writing portions (the assignment is a google form/quiz) later.

If I understand what you want, it is easy to add another teacher at an institution into your course to check out what it looks like as a student.
Go to the people tab and click on the +People link. add the other teachers email address, select add by email address, give them permission of student and send them the request.
They can accept and will be in your class as a student.
If that is not what you want, please provide some more information
