With the Canvas Student app, it's sometimes easy to miss the note of which file type(s) is required for the assignment. That can be seen in the Assignment Details. How do I view Assignments in the Student app on my iOS device?
You can also verify something was submitted by checking the Details: How do I verify my assignments were submitted in the Student app on my iOS device?
If you're trying to "attach" an item by selecting it from the Student assignment, you could also try the "share to" option from most third-party apps. You select Student and then the course and assignment.
