I wanted to ask of there is a way to know edit history for people. A lot of teachers had their display name changed and we can't figure out a way to know who did it. I can say it's not always the teacher as sometimes it gets offensive.

This sounds pretty suspicious! Are you trying to figure out who is editing the display names for users in your account? If so, Canvas support might be able figure this one out. A deep dive might be required from their team to determine the culprit. They would need some exact details in order to try and identify who is editing the display names for users. They will usually ask for a link(s) to the user page for anyone impacted, a time and date as to when they were edited, and any information related to what the names were listed as previously.
I know that users can edit their own name if an account settings allows for that in the root account. You can disable this setting in the root account if it is currently allowed.
