How to hide available from/until and due dates of an assignment from students?

Hello, in our course we want to do attendance through a canvas graded quiz. It is a large course with 500+ students. It is imperative that students would not be able to see from when till when the graded quiz attendance registry is open on Canvas, we will announce that in class. Because if they see at which times the attendance quiz is open then they will be able to fill it in from home just as well. Is there a way to hide from students the "available from/available to/due" dates on a canvas quiz/assignment?

The only way I know of to hide that information is to not publish the quiz/assignment.  Which would mean that you would have to publish it at the time you want it to become available.  Not the ideal case as you probably want it automated where you set it up in advance to become available at a certain time without students knowing when that time is.
