Is there a way to view the e-mail history with a student?

Are you referencing the Canvas Inbox feature inside of Canvas? If so, on the free for teacher edition of Canvas, only your student will be able to view their history, which includes read messages, unread messages, sent messages, etc. Teacher accounts on the FFT platform do not provide you with access to view their personal history, so you'd have to sit down with your student and actually look through with them on their account.
