I'm not a Canvas developer but I wanted to give you some response so you would know your question has not gone unnoticed. I believe most would choose a Linux distribution as it is the preferred choice for web servers and development (safe enough statement since you didn't list OSX ). As for the version, I'll go out on a limb and suggest just starting with the latest Ubuntu version if that's the distribution/variant you prefer. Now if you were asking which variant of Linux though, well that's an entirely different conversation
