I have a course with 2 assignments.
And I need to know, via API, when a student started and finished each assignment.
Is that possible?

I don't know of a way to get information about when a student started an assignment because it isn't captured anywhere. The only difference would be for a Quiz Submission.
For general assignments, you would want to look at the Submissions endpoint to look at when it was actually submitted by the student.
