Is there a way to change the answer choices from ABCDE to something else, such as FGHJK ?

Mastery Connect uses a standard set of ABCDE for multiple choice questions. There isn't a way to change those at this time. You can submit a support request to the Mastery Connect support team to inquire about the possibility of adding this functionality in the future. You can do this by clicking the ? inside the circle in the upper right corner of the screen by your name.
