I had a teacher select to use the speed grader to grade her Google LTI submissions. There is no preview available for her to grade the work! What can we do?

Personally, something like this would be something I'd recommend submitting to Canvas Support so they could access your course/assignment details and do further troubleshooting as necessary.

Has anyone run into issues with Speedgrader erroring when opening a student submission from a dropbox? See image for error information. I accessed this directly through the gradebook and instructors are getting the same message.
My class policy is that late assignments can be accepted at professor discretion, but they will have a 50% penalty. This is a gate you pass through once, and there are no further penalties.
