Quick question --- could a student copy and paste information before lockdown browser and hit control v when in lockdown browser?

No, students usually are unable to copy and paste information from the normal browser prior to opening lockdown browser, then pasting it in there. LockDown Browser has this in place for academic integrity reasons.

Is there any way to use LockDown Browser for essays where the student needs to cite their sources? I was hoping they could do all of their citations and then copy start the quiz then paste, is that a no? In this case (and I am not sure it matters), the text would be from a word document not a "browser"

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?

We are all familiar with the standard Course Calendar, where assignment due dates are automatically added.
