How do I change Open, Close & Due Dates in a course using one process?

I'm a little confused by the question, so I'm not sure if this is what you're looking for or not. You mention "open, close, and due dates" but you also mention "module dates" in your title. Assignments have open, close, and due dates. Modules only have a lock until date, which is essentially the date to open the module. I think you mean assignments, but you're looking at the modules page and so connected the two.
For assignments, Canvas has the functionality to change all the dates at once, but not from the modules page. You need to go to the Assignments page to do this.
Once you're on the assignments page, click the "more options" (three vertical dots at the top right) and choose "Edit Assignment Dates". This opens a batch edit page that allows you to set when the assignments open, close, and are due for the entire course. This is the closest that Canvas has for editing the dates for all assignments in one location. If the bulk date editor doesn't work or you really want to edit assignment dates from the modules page, you have to do it one at a time. Click the more options and choose Assign To.
For modules, the functionality to edit them all in one location does not exist in Canvas. You would need to edit each module separately.
