If you (or anyone else) is looking for guidance on how big the image should be, the University of Minnesota (at https://it.umn.edu/services-technologies/how-tos/canvas-add-image-course-card-in) recommends 262 pixels wide by 146 pixels high.
I have found that going with something two (524 by 292) or three (786 by 438) times that size can help when making the picture because you can see more and/or have more detail but it will scale down.
