I'm not aware of anything within the core Canvas environment that allows for this at this time. But, I see that you have submitted a new idea here in the Canvas Community:

Thank you for doing this...as this would be the proper way to make suggestions for enhancements to Canvas (there are other ways Instructure gets feedback, too, by the way).
The entire idea process is undergoing some changes at the moment (see Turning Your Feedback into Better Prioritization a... - Instructure Community - 637959), but hopefully your idea will get some interest in the future.

Previously on the built-in rubrics, vertical view, the rubric items were collapsed. You could expand them to see details of each point value. As "Ideas" section is gone (at least for now), I'm posting a feature request here. Mobile app shows a list of students who have submitted or not submitted a quiz/assignment. Would be good to have this in web version as well as way to export csv.
