I do see how this would be a useful payment option for many users. Right now it does not look like that is possible based on what I see on THIS guide. However, since the payment gateway is a paid service, it might be best to ask your CSM about that.
I also think that this would make a great feature request! Can we have you submit this idea? HERE is a link to the ideas page for Canvas.

I'm pretty sure that the types of payments allowed depends on the payment gateway ( https://community.canvaslms.com/t5/Canvas-Catalog/What-payment-gateways-are-supported-in-Canvas-Catalog/ta-p/1738 ) that you have set up with Catalog. However, I do not know if any of the supported payment gateways accept cryptocurrency.

I’ve seen how features like these can make a huge difference in usability.
