I have completed 2 classes on the canvas platform however the classes still appear on my dashboard.

If you are a student, and you completed the class however the class didn't get removed from your dashboard yet, you can click the 'Courses' button via the global navigation bar, and unstar that course from the courses list. This will remove it from the courses menu as well as your Dashboard.
The course will also be removed from your dashboard after it has been concluded. The course will likely be concluded shortly after the last day of the class.
