We are looking for a way to ensure students complete our Orientation course prior to accessing their degree courses. Is there a way to gate courses so a user cannot access 1 course until they have completed certain activities in another course?

Canvas LMS does not have this as a built-in option. As a Canvas admin for higher-ed, I would say this sort if thing would generally be controlled by the student information system (sis) / registration system rather, which would pass enrollment information to Canvas at the appropriate time. We used to have an online orientation delivered through Canvas that students had to complete before they could register for classes (controlled by our admissions/sis systems), but for various reasons that was discontinued earlier this year.

You might be able to do this using requirements and prerequisites in the orientation course and by setting the degree courses for self-enrollment requiring a "secret URL." You would create your Modules in the orientation course with requirements to ensure they complete all parts. Once they have completed the requirements, they would unlock an additional module, which is set with a prerequisite that they must complete the previous module. That final module would contain the link(s) to the degree course(s), in which they could then self-enroll.
