How can I create a spreadsheet of all student names and email addresses enrolled in my course from the Canvas people tab?

Instead of doing this form the People menu, the roster download can actually be found under the New Analytics menu. If you click that menu, you can go to the "Reports" tab, and from there click the "run report" button on the right of the "Class Roster" row.
