I was wondering how to hide my name (as a grader) from both the class list and speedgrader when I make comments?

Not sure if you will have this option, but at my institution, you can go to the settings link for the course, then select feature options and turn on Anonymous grading and anonymous instructor annotations.
What I would then do is add one of your colleagues to your class as a student and assign only them an assignment that you want to grade. Grade it the way you want with those options turned on. Then check with your colleague if you are anonymous or not.
I am assuming there will be more than one grader for the assignments otherwise, you will not be anonymous.

In legacy SpeedGrader, the instructors see students' initial post followed by replies. Why is it no longer listed that way in the Modernized SpeedGrader? Grading is made easier if the initial post is first, making it easily identifiable.
