The purpose of the "Missing" tag in the Canvas gradebook is to notify students to turn in an assignment that they did not turn in by the due date. However, once the assignment closes, the "Missing" tag is just useless (students can no longer submit) and sticks around forever. The only way to remove the "Missing" tag once it's put in is to manually select every single missing score in the gradebook, open the menu, and change "Missing" to "None."
Canvas should really have a feature to either bulk-change "Missing" tags in the gradebook or to make it an assignment option that removes the "Missing" tag once the assignment closes.
