I don't seem to find the AI tool in speedgrader to assist with text input grading. There is also no video available yet. The tool is enabled at root level but I can't find it in a quiz or an assignment with a text-based input.

Do you have all three of these feature options enabled:
While I haven't used this feature myself as it's not really desired at my institution, the release notes did make it clear that all three of those need to be enabled for the functionality to work. In addition to the feature options, I believe you have to have a grading rubric created and attached to the assignment.

If everything looks correct on your end but you still can't see the Grading Assistance option, you may want to loop in Canvas Support so they can take a closer look. You can also refer to this guide for information: How do I use the IgniteAI Grading Assistance for SpeedGrader?
