I want to create a short essay quiz (1-2 paragraphs) with fill-in-the-blank for my students. Need help.

If using New Quizzes, I would suggest the Fill in the Blank questions type.
How do I create a Fill in the Blank question in New Quizzes?
Each blank can be set up for open entry, drop down or a word bank. Some options have additional settings.
If you are using Classic Quizzes, try Fill in Multiple Blanks questions type.
How do I create a Fill-in-Multiple-Blanks quiz question?
There are more options for the blanks when setting up the quiz in New Quizzes as compared to Classic Quizzes.
