Can Observers see the student's full assignment submissions?

Can Observers see the student's full assignment submissions? We need them to not be able to do this.

If they can, is there a way to define a similar role that doesn't have this permission?

We looked at the Observer Visibility and Participation document

However, it was not clear from there.

That's an interesting question, @EvanDonovan. I looked through the user permissions for the Observer role and don't see the ability to view their student's submissions listed. Given the intent of the Observer role (as explained in the page What is the Observer role? ), this makes sense to me. If you're interested in setting up a situation where Observers can view their students' participation in discussions, see the content, etc. but not see what their students submit to assignments, you might be able to do that using some tool outside of Canvas to collect those submissions. I can imagine using a Google Form for this purpose.
