I have a bunch of old quizzes and I wanted to know if there was a way to take questions from the quiz and add them to item banks.
I haven't worked with item banks before but wanted to know.

Before answering with tons of details, I'm going to assume that you mean that you have new quizzes and want to move the questions from there into item banks. When you click on the question then you will see a section titled Item Banking. Click on it and the blue link titled "Add to Bank" will open.
If you mean that you have Classic Quizzes then the process includes one additional step; that is, you'll migrate the quiz to New Quizzes and then move the questions.
There is a way to move questions in bulk by exporting to a QTI and uploading. Images can be an issue, though.
