I am trying to find a previous created quiz that was overwritten. Is there any way to find that overwritten quiz?

I am assuming when you say a quiz was overwritten you're referring to a course import doing the overwriting, correct? If so, I don't believe the original quiz would be recoverable easily. If this was a very recent overwrite, someone on your Canvas team may be able to access the original quiz from their Canvas Test/Beta environment, but there would be no guarantee of that. I'd recommend reaching out to your local Canvas team (usually in the eLearning / IT / Digital Education areas) with the details to see if they may be able to access things in one of those other environments for you.
