I am trying to add a Studio quiz to a new assignment. The tutorials show to add it as an External Tool. BUT - Studio is not an option.
I looked at available Apps. Not shown there either.
so - how to I add my Studio Quiz?

I assume that you have been looking at this Guide as you've been trying to add a Canvas video quiz to your course:

Has your school paid for Studio? This is an add-on for Canvas, but there is a cost to it. If you have the "Studio" icon displayed on the far left-hand side of your global navigation menu in Canvas, then you have Studio.
If you have Studio, are you sure that you are clicking on the proper icon in the RCE (Rich Content Editor)? You shouldn't be clicking on the icon that looks like a plug-in. Rather, you should click on the icon next to it that is for Studio...as depicted in the screenshot within the linked Guide under "Open Studio in Rich Content Editor" (labeled as "1" in the image).
