I've had a look around but can't seam to see the answer to this.
Is there a report or a way to see what sections are in the different courses that do not have an end date setup?

You can run a provisioning report with the "sections" option checked, and that should give you a CSV of every section in the account/term you selected with columns for the start and end date. There are also course columns (canvas and sis) there that can identify the course which the sections belong to. If you wanted to see something like course titles, you'd need to check the courses option along with sections and do some spreadsheet magic (vlookup) to link that data together into a single sheet (uf this doesn't make sense to you, let us know).

The fact that the teacher's gradebook view only displays the letter grade in the "override" column makes it difficult for the teacher to review grades, as the numerical grade entered cannot be determined in that view.
